I don't eat a lot of meat, but I eat some. I love fish.

I'm looking for a healthy cookbook that incorporates lots of fruits and veggies and whole grains. And has breakfast, lunch and dinner items.

Nothing too drastic (i.e. no carb, low-fat, etc.)

Just a plain healthy lifestyle cookbook.

try asian or specifically japanese cookbooks, especially since you like fish

you can get some good deals on "bargain" cookbooks at borders, for example

I just don't have any ideas!!

Chicken and Cucumbers
2 tbsp. olive oil
1 tbsp butter
3 boneless, skinless chicken or turkey breasts
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream

Heat oil and butter in skillet. Cube chicken and add to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Return chicken to skillet. Stir in sour cream.

Meatloaf
2.5 lbs. hamburger or ground turkey
1/2 cup crushed pork rinds
1/4 onion, chopped
1/2 tsp garlic, minced
2 eggs, beaten
1 can tomato paste plus 1 1/2 cans water, mixed

Topping
1 can tomato paste and 1/2 can water, mixed
2 tbsp. prepared yellow mustard
2 tbsp. splenda brown sugar substitute

In bowl, combine beef, onion, garlic, eggs, and pork rinds. Mix well and pat into baking dish or cast iron skillet. Bake 1 hr at 400, drain off grease. Pour water and tomato paste mixture over and bake for 30 minutes at 350. Mix topping ingredients and pour over meatloaf, bake another 30 minutes at 350 degrees. Serve with Salad.

Fragrant Lemon Chicken
1 apple – peeled, cored and quartered
1 stalk celery with leaves, chopped
1 (3 pound) whole chicken
salt to taste
ground black pepper to taste
1 onion, chopped
1/2 teaspoon dried rosemary, crushed
1 lemon, zested and juiced

Rub salt and pepper into the skin of the chicken, and then place apple and celery inside the chicken. Place chicken in slow cooker. Sprinkle chopped onion, rosemary, and lemon juice and zest over chicken. Pour 1 cup hot water into the slow cooker. Cover, and cook on High for 1 hour. Switch to Low, and cook for 6 to 8 hours, basting several times.

My fiance is a vegetarian, no big deal to me. I would love to cook for her, and I have no problem eating vegetarian food myself, but I am a meat eater too. I do, however, watch my carb intake. Where can I find some dishes that are low in carbs and vegetarian? FYI, she will eat eggs, fish, and drink milk products.
FYI, I have already given 3 of you bad marks for either questioning her decision on being a vegetarian, or being one because she eats fish. I am looking for constructive feedback, not bad-mouthing.

Pretty much any vegetarian diet is low-carb friendly. A vegetarian's diet should be mostly plant based anyway. Just make sure to get lots of good fruits and veggies, and since your girlfriend eats fish, it shouldn't be too difficult to come up with some recipes that will please the both of you. If you are going to eat pasta or rice, make sure it is whole grain and use it as a side to accompany vegetables, as opposed to making it a main dish.

to lose weight if cereal is still in my diet, like Kashi, corn flakes. (with fat free milk)? When people go on no bread diets, can they still eat cereal, or graham/animal crackers?

i am 5'1 and 105 lbs. and i really want to lose weight. i run for about 40 min. a day, and my calories are only about 1200 or less a day, but my thighs are still jiggly, any tips? do i just eliminate bread (right now, i don't eat a moderate amount of carbs)? if so what are some alternatives, because i like bread.

According to the label, 12 halves of graham crackers contain 9 grams of fat; 1.5 grams is saturated. Now, partially hydrogenated soybean oil is the fifth ingredient on the box after enriched flour, graham flour, water, and sugar. Since this is the only fat listed in the ingredients, I assume I ate 1.5 grams of saturated fat and 7.5 grams of essentially the same thing in hydrogenated fat.

So, graham crackers are not the healthy snack I have assumed them to be. These a full of unhealthy hydrogenated and saturated fats….!!!

And for your thighs try this exercise: To tone up your thigh muscles, you need to do strengthening exercises such as squats or lunges. If there is fat you wish to lose, aerobic exercise is best for that – any type that gets you breathing harder than normal that you can do for 15-30 minutes at a time preferably.

Omg no! haha! Your glucose was just high because of all the carbs you ate. Diabetics that are untreated typically have extremely high blood glucose levels. We are talking 200s and upwards. And it needs to be consecutive usually, because sometimes if you have trauma towards your body, your glucose levels can skyrocket. If you want an accurate test, make an appointment with your MD (Doctor) and do a Fasting Glucose test. He/She will tell you not to eat 10-12 hours before you come in, and then they will check your glucose. the numbers you are looking for are between 70-110.
